SUPPLIES
1 pound of strawberries
2 cups of wild rose petals (lightly packed)
1 packet of fruit pectin (or 1 tsp)
1.5 cups of sugar
The juice of 1 lemon
12 oz filtered water
Mason jar
Mixing spoon
Large saucepan
INSTRUCTIONS
Gather wild roses with care, plucking the petals for the jam. When gathering, be sure to receive an intuitive “yes” from the plant before you harvest. I like to let the plant know what the medicine I’m making with their petals will be used for and offer them something in return, like a song, a piece of hair, or a crystal. Don’t forget to leave enough behind for our friends, the pollinators!
Gently wash off any bugs, debris, etc. and allow the petals to dry.
Add 12 oz distilled water and 2 cups of rose petals to your large saucepan and bring to a gentle simmer.
Add in 1 pound of chopped strawberries, 1.5 cups of sugar, the juice from 1 lemon, and some lemon zest to your pan and let simmer over low heat for about 15 minutes.
Stir in 1 packet of pectin until incorporated.
Continue simmering for 30-40 more minutes, stirring periodically, until the jam begins to thicken.
Remove from heat and store in a mason jar in the fridge.
Use in coconut yogurt, on toast, on top of nice cream, or however your heart desires! Enjoy!
